Ingredients.   

1 Aubergine -   wash and cut in to one inch thick  slices. Leave the slices in water so they don't get dark . 

1/2 tsp mustard seeds

PASTE

2 tablespoon oil 

3 tablespoon Gram Flour

1 1/2 tablespoon crush ginger 

1 tablespoon crush garlic 

1 teaspoon turmeric powder 

2 teaspoon Coriander Cumin mix powder 

less than 1 teaspoon Garam masala  

handful of crushed plain roasted peanuts

less than 1 teaspoon Chile powder 

1 teaspoon salt 

1 1/2 tablespoons plain yogurt  

Create a smooth paste with the paste ingredients, if you need add little water to loosen. Spread the paste onto both sides of the aubergine slices. 

Heat a frying pan,  put some oil in,  add mustard seed when they have popped lower the heat . 

Add the pasted aubergine slices to  medium heat, cook both side until golden. 

Garnish with fresh chopped coriander 

Serve with a chapati or make a sandwich in slice of bread .
