Ingredients
9 Cardamon Pods
thumb of ginger
Cinnamon - 5 cm shard
2-3 tsp loose tea or 2 bags
3/4 pint Full fat milk
1/4 pint of Condensed milk (optional) or Honey or Sweet thing
Method
Start to heat a deep tea pan - med heat
Smash the cardamon pods and cinnamon until pods are open (gently)
Place in pan
Slice ginger and smash up
Place in pan
Heat for 20 secs
Add full fat milk, heat on a low to med heat, stirring regularly until milk starts to froth (do not let it overflow) - about 3-5 mins
Add tea and lower temp to gentle simmer. Simmer for 5-7 mins
if adding highly calorific but nice condensed milk, add now and simmer for further 2 mins
if no condensed milk, add sweet thing and simmer for 2 mins.
Sieve into nice chai cups and have with a ginger nut
