Serves: 3

Ingredients

1 ripe mango, chopped into small (1cm) cubes 

Half a bunch of coriander, chopped finely 

1 red onion, chopped finely 

Juice of a lime 

2 red chillis, chopped finely (or more if you prefer!) 

Drizzle of EVO 

Dash of good quality balsamic vinegar 

Salt & pepper to taste 

*can also add a cucumber or avocado (chopped same size as mango)


Method: Mix all ingredients together and serve it up with garlic prawns, crispy skinned fish, or any seafood.
