Feeds 4-6
Ingredients:
1 tin of sweetcorn drained
half tsp Turmeric
half tsp Cumin
Half a cup of Rice Flour
2 tbs of polenta
1 cup flour
1 and a half tsp salt
1 tsp of pepper
drizzle of olive oil
4 tbs of milk
1 medium egg
half tsp Baking powder
1 hot green chilly
2 or 3 spring onions chopped
handful of coriander finely sliced
handful of spinach
Method:
Whisk together the egg, milk, oil and add to the dry ingredients.
Add all the veggies that have been sliced finely.
Should resemble cake batter, if it is a little thick you can add another tbs of milk or some of the water from the can of sweetcorn.
Taste and adjust seasoning to your preference.
Pan fry a dessert spoon full with a little olive oil. flip once the underside has a little colour/ when you shake the pan the fritters start to move a slide.
Enjoy with a bit of red chutney or tomato sauce.
