Ingredients:
180g self raising flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 tbsp icing sugar
2 or 3 very ripe bananas, mashed with a folk
1 tbsp oil
1 tsp vanilla extract
260ml milk of your choice (almond works well) you can add chocolate chips/nuts/berries to the batter if you wish

Method:
Sift the flour, baking powder, salt, sugar and cinnamon in a bowl and mix well.
In a mixing jug or separate bowl, whisk the milk, vanilla and oil together
Add the wet ingredients to your flour mix in your bowl
Add in the mashed bananas and whisk together well until the batter doesn't have any lumps.
Now mix in any additional items (chocolate chips/nuts/etc)
Add a little butter to a medium heat pan
Pour a ladle of the batter into the pan and let it spread a little to make a small circle. You do not want them too thick.
I usually make about 4 at a time. After a few minutes, once bubbles have formed on the top of the pancakes, flip them over and cook evenly on the other side.
Enjoy with some Nutella, maple syrup or ice cream. xx
