Ingredients

400g coriander seed 

500g cumin seed 

150g cinnamon stick   

100g large cardamon pod 

50g small cardamon pod 

100g star anise 

300g cloves   

100g white pepper 

100g black pepper 

50g bay leaves 

1 nutmeg 2

5g nutmeg flower (Gujarati word javatri ask at shop keeper)

25g fennel seed 

Mix all together and warm the oven to 200C. 

Switch off the oven and put the mixture in the hot oven for 10 to 15  minutes.

Remove from oven. Leave to cool.

Grind in a spice grinder. 

Store in an air tight container
