Makes 1 loaf cake, as seen on Hairy Bikers

Ingredients

2 Lemons

275g Sugar

175g unsalted butter - soft

200g Self raising flour

1/2tsp baking powder

3 large eggs

Method

Preheat over to 180C

Grease a 23 x 12 cm loaf tin with butter and line bottom with grease proof baking paper

Grate zest of the lemons into a bowl

Ideally use food processor, but if not mix with hand - 175g sugar and all the butter, flour, baking powder and lemon zest. Mix until all is combined and thick smooth mixture.

Put mixture into the tins on a level with tops 

Bake for 35 mins, until well risen, pale golden brown.

Let it cool down for 5 mins out of oven

The Drizzle

Squeeze juice of 1 lemon into a bowl, mix with remaining 100g sugar.

Turn out the cake on a wire rack above a plate.

Make holes in cake top side with a skewer

Spoon over half of the lemon drizzle mixture and let it soak in

Leave for 5 mins

Spoon over remaining lemon drizzle mixture

Leave for 1 hour to let the drizzle crystallise. 

Eat with cream, ice cream and Chai!
