Ingredients
Cake
60g Butter, cubed
63g Golden Syrup
63g Black Treacle
100g Plain flour
25g Self Raising flour
1 tsp bicarb of soda
1 heaped tsp ground ginger powder
1/2 tsp mixed spice
50g caster sugar
a pinch of salt
125ml milk
1 egg beaten
Syrup
125g brown sugar
125ml water
1 tbsp finely grated fresh ginger
Method
Preheat oven 170 C
Grease with butter - a loaf time 23cm /12 cm, line the base with greaseproof paper
In saucepan - Butter, syrup and treacle - melt and stir occasionally - low heat, when combined removed from heat
Sift both flours, bicarb Soda, and spices into a big bowl
Stir in sugar and salt, then add milk and egg
Mix together until mixture is smooth
Gradually add the melted butter / syrups mixture, stirring continually until fully combined.
Pour mixture into the loaf tin
Bake in oven for 50-55mins - or until risen and firm to touch. A skewer inserted into the center should come out clean.
Take out of oven and let it cool for 5 mins and then turn out onto a wire rack.
Syrup
Combine all syrup ingredients in a pan and bring to boil. Simmer on low heat 5 mins.
Prick the cake all over the top with a toothpick...Slowly pour hot syrup over and let it soak into the cake.
Eat a slice with cream or ice cream, add a nice cup of chai!
